Good Food: Tuna Patties

This is one of my favourite new-found recipes. So simple. So budget friendly. So healthy. And so absolutely delicious. Do you follow this guy? This is his recipe. He’s rad. He’s all about the good stuff. Good surf. Good food. Great family. You should check him out. He’s ace.

What you need:

Finely sliced or grated spring onion
Grated carrot
Tin of ethical tuna
One roasted Sweet Potato (just roast it whole, skin and all and then scoop out the delicious innards and mash them up)
Fresh herbs (I used mint and coriander – but anything is fair game)
Lots of garlic
Big spoonful of your favourite spice/s (personally I’m on a bit of a cumin kick at the moment – can’t get enough of the stuff)
One free-range egg
Coconut oil for frying

What you do:

So easy. Chop everything up and put it in a bowl. Mix it all together with your hands.

Shape into patties and then fry in coconut oil until golden brown. I served mine with a leafy green salad, crusty bread and a big helping of natural home-made yoghut. Seriously, you MUST try this. Takes the old tuna patties to a whole new level of yum….

    olga - Just so you know, canned tuna (and anything else) is loated with BPA. Not the best thing to feed your baby (and yourself). It’s best to limit our exposure to BPA while they figure out how to make bpa free cans.ReplyCancel

    Lilybett - Neither Lovely Husband nor I eat fish but we want the boy to – so I made up a batch at the beginning of the week, individually wrapped them and stuck them in the freezer. Now I just pull one out in the morning and cook it up for either lunch or dinner in my tiny one-pattie-sized fry-pan with some coconut oil. We used regular potato but might give sweet potato a whirl next time.ReplyCancel

    Julie - Yum, will have to make these. Everything except for the garlic. Do you know if they would freeze? It would be great could make a huge batch up and freeze in small batches for Jarvis’s dinnersReplyCancel

    Baby Keepsakes - Tuna is superb for protein. Also the sweet potatoe has low GI and will be digested very slowly providing fuel for longer than high GI carbs. Good choice, so I may try this. Tom.ReplyCancel
