Thai Coconut Iced Tea
Ingredients:
1 pot of Jasmine tea (3-4tbsp loose leaf tea or 3-4 teabags)
1 cup of good quality coconut milk
1 handful of fresh mint leaves
1 tbsp. of coconut sugar or alternative sweetener
Method:
Make a hot fresh pot of jasmine tea and let it steep for 5-10minutes or so (I like mine nice and strong), stir the sugar into the teapot until it dissolves. Allow the tea to cool to room temperature.
Pour tea into a large jug or into separate glasses. Add equal quantity of coconut milk and a large handful of ice cubes. Add in fresh mint leaves and give the drink a good stir.
Serve immediately.
This drink is beautiful and light and creamy and perfect as a non-alcoholic cocktail on a spring afternoon. It’s not really suitable for kids because of the caffeine content of the tea. You could easily make a kid friendly version by using a caffeine free herbal tea (like camomile).
