Thai Coconut Iced Tea

1 pot of Jasmine tea (3-4tbsp loose leaf tea or 3-4 teabags)
1 cup of good quality coconut milk
1 handful of fresh mint leaves
1 tbsp. of coconut sugar or alternative sweetener

Make a hot fresh pot of jasmine tea and let it steep for 5-10minutes or so (I like mine nice and strong), stir the sugar into the teapot until it dissolves. Allow the tea to cool to room temperature.

Pour tea into a large jug or into separate glasses. Add equal quantity of coconut milk and a large handful of ice cubes. Add in fresh mint leaves and give the drink a good stir.

Serve immediately.

This drink is beautiful and light and creamy and perfect as a non-alcoholic cocktail on a spring afternoon. It’s not really suitable for kids because of the caffeine content of the tea. You could easily make a kid friendly version by using a caffeine free herbal tea (like camomile).

Enjoy! x

Dena - Hi Sash! I’ve been reading your lovely blog for a little while now. Such a beautiful little family you have! But I am writing because your past few posts have not been showing up in my RSS feed reader. Have you changed your settings? Will you be keeping things this way? It’s hard for me to keep up with blogs that require the click through — you know what it’s like trying to be a mama, a blogger, and keeping up with your favourites. 😉

Look forward to hearing from you! xoReplyCancel
