Good food : Perfect baked eggs.

I have a bit of a food obsession, I can’t stop eating. Food is my comfort and my sustenance, it brings us warmth and happiness and it is a way I nurture both myself and my child. We, like most families in Australia, live on a pretty tight budget and I have to watch where I spend my dollars. I’m always looking for ways to create exciting, interesting, delicious foods that don’t break the bank. This is one of my favourite recipes. Warm, spicy tomato sauce with gooey eggs, it’s packed full of goodness and is a perfect winter brunch… or lunch… or dinner. It’s pretty great any time of the day. Mmmmm… get it in ya.

Perfect Baked Eggs Recipe

Ingredients:

2-6 freerange eggs (depending on how many people you’re feeding)
1/2 cup cooked quinoa
A handful of fresh cherry tomatoes
Fresh torn basil
Parmesan cheese

For the sauce:

1 tin of whole tomatoes
1 onion
2 cloves of garlic
1 tsp paprika
1 pinch of cayenne pepper
peppercorns and sea salt to taste
2 large handfuls of hand torn English spinach (baby spinach or kale would also work well)
1 large handful of torn fresh basil (or substitute with your favourite fresh herb)

Method:

Add onion, garlic and spices to the pan over a medium heat with your choice of butter or oil. Once onions are soft and spices fragrant add the tin of tomatoes and stir over a low heat. When the tomatoes have softened and reduced add handfuls of greens (spinach and fresh herbs) and cook for about 5 minutes until the leaves wilt into the sauce. Take the sauce off the heat and season with salt and pepper to taste. Stir quinoa through the sauce.

Add sauce to separate ramekins or one large baking dish. With a spoon create a dip in each of the ramekins (or in the corners of a large baking dish) and crack one whole egg into the dip, leaving the egg yolk whole. Sprinkle a handful of parmesan cheese over the egg and add fresh cut cherry tomatoes to the top of the dish.

Place ramekins into a preheated oven (around 200 – 220’c) and bake until the egg is cooked to your liking. In my oven it took around 12 minutes for soft yolks. Sprinkle with fresh herbs and more cheese and serve warm with a side of bread or salad for a perfect, affordable and healthy breakfast, lunch or dinner.

This is one of my favourite any time of the day meals. It is so easy and quick to prepare, the sauce freezes and reheats well and it gets the toddler tick of approval. Warm, nutritious and tasty food that won’t break the bank. It doesn’t get much better than that.

You can easily swap the spices and herbs for whatever you have on hand. Be adventurous and play around with flavours to find your families favourite combination.

    Jash - I just tried making this.. I didn’t use the egg, but in the tomato sauce, i added diced zucchini, chick peas, and kidney beans.
    When i spoon it into my bowl, I added a teaspoon of fresh pesto that I just made.
    I ate this with the quinoa. SO GOOD. 🙂ReplyCancel
