We’ve had the winter blues a bit this week. Sniffles and coughs and general cold in our bones from our drafty old house. The old wood heater isn’t cutting it this week as we pack the house and with every box the house seems to become draftier and colder and our spirits have been dipping as plans don’t quite turn out as planned – they never do though, do they? Thank goodness for so many letters in the alphabet to create back up plans with.
At the end of summer my lovely friend Emma from My Darling Lemon Thyme was down in the South West with her little kiddos for lunch and a play… we talked about many things, food and politics, travel and the longing for home… and apple cider vinegar. I’ve used ACV for lots of things but as a drink? Not so much, it really never even crossed my mind. Emma mentioned that she used to drink it as a kid, and that alone had me wondering. About a month ago I created this little winter warmer, which is packed full of good stuff to keep your body (and your mind) in good shape, particularly in these winter months. It helps cure the ails of the minor cold and helps keep your body fighting fit when you aren’t sick at all.
There is something very comforting about a warm lemony drink… and this one makes a particularly good companion on a cold winter night, for big and little people alike.
Ingredients
1 Tbsp Lemon juice (freshly squeezed)
1 Tbsp Organic Apple Cider Vinegar
1 Tbsp Organic Raw Honey
1 tsp Grated Ginger
1 large handful of fresh thyme
Method
Grate your ginger and add to a tall glass or mug along with the apple cider vinegar, honey and lemon juice.
Top the glass with boiling water and stir well. Top with fresh thyme and lemon slices.
You can happily curl up in front of the fire with this one (sick or not) and know that you are not only enjoying a delicious treat, but nourishing your body as well.
* The beauty of this drink is it’s easy to adjust to your liking. A little more honey, a little more lemon, a bigger helping of ginger
I’m sitting here drinking a tall glass of this beautiful drink right now… because, it’s good to find winter comfort that is also good for you… and if nothing else it’s keeping my hands toasty warm in this igloo of a house.

Corrine - I couldn’t picture knocking this back (something about apple cider vinegar creeps me out, but I *know* how good for you it is!), but boy is it a healthy concoction, I know my body would thank me if I did!
